Abstract
This article aims to reuse sardine waste from the Mabunda market to produce chicken feed. The experimental methodology consisted of the following steps: collection of the waste, which was stored in a cooler with ice at 11°C, transported to the ISPK Laboratory, and then washed, weighed, cooked, pressed, dried, crushed, and sieved. 820.647 g of waste were used to produce fishmeal, with a production yield of 53.765%. The physicochemical and microbiological characterization of the fishmeal was based on the standards of the Adolfo Lutz Institute (Analytical Standards of the Adolfo Lutz Institute, IVth Edition). Chemical and Physical Methods for Food Analysis, São Paulo, 2008. IAL 012/IV, Pages 98 to 124, moisture content of 11.94%, pH 5.86, ash 76.27%, sprouted proteins 16.37%, lipids 18.13% and total caloric value of 534.06 Kcal/100g were determined, the determined parameters were compared with those obtained by the authors: (Boscolo, Feiden, Signor, Signor, & Reidel, 2005), (Álvares, 2014), (Rebelatto, et al., 2022) and (da Silva, Soares, Echevenguá, & Carbonera, 2015), it was observed that the fishmeal is within the standards, with the exception of the ash and lipid contents, balance The mass was 2366.168 g.
